Within the next week, John Simmons expects to open the latest incarnation of his popular Firefly tapas eatery, this one in the Henderson/Anthem area (11261 S. Eastern Ave.). It’s been nine years since he left his job in the kitchen at one of the most popular restaurants on Las Vegas Boulevard to take a gamble in the suburbs. Those years have been a roller coaster ride filled with expansions and false starts, critical praise and harsh critiques. For most of that time, however, Firefly has stood as one of the most popular off-Strip restaurants in town. It’s not uncommon to wait more than an hour for a table at its original Paradise Road location. But as Simmons recalls, it wasn’t always like that.
